Since then, due to advances in baking technology, as well as ingredient quality and availability (refined sugar, refined white flour and baking powder), cakes have become the sweet dessert we know and enjoy today.

I'm certain that the merchants in Venetia were enjoying cake in 1494 when they first developed the system of double-entry bookkeeping, as modern accountants do today.
